Kitchen equipment and catering supplies are being ordered in abundance for the opening of a third Poncho 8 restaurant in the capital this month.

Founded by college friends Frank Yeung and Nick Troen in 2009, the chain has grown from strength to strength over recent years, offering fresh and traditional Mexican fare to hungry Londoners.

The new venture is to be sited on Cullum Street in Leadenhall and the pair have ambitious expansion aspirations to make this the first of many new openings over the coming years, with the aim of operating 20 Poncho 8 establishments by 2015.

Existing eateries operating by the partners can be found in Spitalfields and St Paul's. A site previously operating under the Poncho 8 banner in Soho was disposed of earlier this year.

Mr Troen said: "At Poncho 8, we're delighted to be bringing our fresh Mexican food to a third outlet here in London, just a month after our third birthday.

"We're constantly updating our offering to ensure that the City's workers have an exciting, healthy meal when they visit our restaurants."

Based on the concept of healthy fast food, diners have the option of choosing from a number of traditional Mexican dishes, including a burrito, skinny box - light burrito with salad - nachos or tacos, before adding their preferred fillings and toppings to go.

Meanwhile, Mexican dining company Tortilla announced plans earlier this month to open its first restaurants outside the capital in the coming weeks, after receiving a significant boost to its expansion plans through funding from Santander Corporate Banking.

Tortilla already operates eight franchises in the London area, but new projects in Kent and Southampton will be added to a third opening in Trafalgar Square to bring the total number of restaurants operated by the firm to 11 by the end of the year.ADNFCR-16001031-ID-801487335-ADNFCR
