Investing in a commercial dishwasher is the most surefire way to streamline the back-of-house processes in your pub, bar, restaurant or catering operation. If your kitchen porter is struggling with the sheer volume of dishes, pots and pans every shift,
a commercial dishwasher will keep them from falling behind. You’re guaranteed spotless, dry and thoroughly sanitised wares in a matter of minutes.
A commercial dishwasher circulates hot water and detergent through its chamber at high speed. Temperatures will reach a maximum of 80-85°C during the rinse cycle, which is hot enough to sterilise and dry the dishes, and most modern dishwashers feature a thermolock that helps maintain those high temperatures. Compared to home dishwashers, commercial dishwashers have much faster rinse cycles and use water more efficiently to keep costs down.
Before deciding to purchase a commercial dishwasher, there are a few things you need to consider:
1. Check what kind of drain you’ll need - a gravity drain may be suitable, but you’ll need a drain pump if the waste plumbing is positioned higher than the machine’s outlet.
2. Check that the water pressure and flow rate to your kitchen are strong enough to cope with the dishwashing machine's requirements.
3. Check the water feed requirements, as some models may require a hot water supply.
4. Ensure you can make time in your schedule to have a staff member clean it daily.
On a day-to-day basis, you can keep your commercial dishwasher clean by running it on a rinse cycle empty. You may have to buy water softeners like salt blocks and tablets to prevent limescale, but check first if your dishwashing machine already has an internal water softener - Classeq's products usually do, but some will require manual intervention.
If you find the machine isn’t draining properly, there may be a blockage. Disconnect the dishwasher from its power source, locate the drain valve and check for faults and blockages (if the issue is still unclear after this, consider falling for professional help).
The dishwasher size you choose will depend on two factors.
Firstly, how busy your catering operation is - a large canteen or busy pub will need a large pass-through or rack dishwasher to cope with the quantity of dirty dishes. A small cafe or restaurant with only a few tables, meanwhile, may only need a small undercounter dishwasher.
The second factor is space - if you need to maximise the amount of usable space in your kitchen, you may prefer a small glass washer or utensil washer instead.
