Mitch Tonks to launch new restaurant

Restaurateur and chef Mitch Tonks has announced plans to open a new restaurant at Plymouth's National Marine Aquarium, expanding his popular Rockfish brand and taking advantage of the opportunity to work in a unique location.

A planning application has been submitted for a 200-seat seafood restaurant in the building next to the aquarium, with an investment of roughly £500,000 in kitchen equipment and other fittings expected. Some 40 new jobs are also to be created through the project.

Mr Tonks already operates sites in Bristol and Dartmouth, where he runs a Rockfish restaurant and flagship seafood restaurant the Seahorse, reports Caterer and Hotelkeeper magazine.

Dr David Gibson, managing director at the National Marine Aquarium, declared that the restaurateur's commitment to sourcing the most sustainable seafood possible is a message that resonates with the aquarium.

The Plymouth tourist attraction is also a registered charity committed to improving understanding of marine issues through education and conservation, and has been the largest aquarium in the UK since it opened in 1998.

"Mitch has dedicated his career to ensuring that people not only enjoy the best quality seafood available but also that the fish he serves in his restaurants are caught using methods that cause as little damage to the marine environment as possible," Mr Gibson added.

Mr Tonks praised the selection of fish available in Plymouth, stating that the wide diversity is reflected in the new restaurant's menu.

"It's great to have the support of the National Marine Aquarium ... It's going to be a unique partnership, and one which we are very much looking forward to developing over the coming months," he explained.

The Rockfish Grill in Devon is paired with a seafood restaurant and renowned for its fresh fish. It specialises in preparing food over an open grill to enhance the flavour of the catch.ADNFCR-16001031-ID-801522677-ADNFCR
