Champion sommelier launches new restaurant

Gerard Basset, a world champion sommelier, and his wife Nina, have launched a new fine-dining restaurant at their award-winning Hotel TerraVina in the New Forest, hoping to improve the hospitality offering they already provide to customers with a varied menu containing locally-sourced ingredients.

The Dining Room at TerraVina will be organised by George Blogg, formerly sous chef at the two-Michelin-starred Le Champignon Sauvage in Cheltenham.

Taking the form of an 18-seat dining room, which runs alongside the hotel's main 55-seat restaurant, the new project will make use of much of the kitchen equipment already in place at the establishment, reports Caterer and Hotelkeeper magazine.

It will run three nights a week and offer a nine or 12-course tasting menu comprising meals created entirely with foraged and fresh produce from Dorset and Hampshire, ensuring guests can enjoy a dinner that is ecofriendly as well as delicious.

Furthermore, the menus will be paired with wine chosen exclusively by the award-winning expert Mr Basset.

Nina Basset, owner of Hotel TerraVina and managing director of the 10 in 8 Fine Dining Group, expressed her pleasure at being able to bring Mr Blogg on board as the new operation's head chef.

"He brings a passion and enthusiasm for food which is infectious and we love all of the forest foraged treats he is tempting us with. We are very excited by this slightly quirky, fun and interesting restaurant concept," she added.

Mr Blogg suggested that the restrictions placed on what kinds of produce he can use makes the new venture an interesting challenge, encouraging him to innovate and think of interesting ways to present the ingredients.

Hotel TerraVina was launched in 2007 and has always concentrated on local and home-grown items, to the extent that the toiletries are created using lavender that is grown nearby.ADNFCR-16001031-ID-801532428-ADNFCR
