Bruno Loubet to open new London restaurant

Renowned chef Bruno Loubet is to open a new restaurant in London. 

He will launch a second Grain Store venue in Granary Square at the new King's Cross Central development in the capital. 

The 120-seat site will also contain an alfresco area overlooking Regent's Canal for as many as 80 people, Caterer and Hotelkeeper reports. 

Grain Store is a vegetable-based restaurant, which aims to make the food type the central element of many dishes. The new venue's menu will be influenced by Mr Loubet's travels and fermented, sprouting, pickled and smoked ingredients will feature alongside fresh and seasonal produce.

"This is the restaurant I have dreamt of opening for years and the time feels right now," he stated.

"I love meat and could not give it up entirely, but the endless opportunities that focusing on vegetables will allow me - the colours, flavours, and textures - are so exciting," Mr Loubet added. 

The chef's preference for vegetable-based dishes has been explored in a recent interview with celebrity food critic Jay Rayner, which was published in the Guardian.

Mr Loubet claimed he did not want to open a vegetarian restaurant, but hopes to demonstrate how vegetables can be used in a more interesting and exciting way than most people assume.

He also said the decision to move away from meat is linked to sustainability and he aims to raise awareness among chefs about the environmental impact of producing meat.

New catering equipment has been installed at the Grain Store, which has been designed around the concept of the 'exploded kitchen'. This means elements of the cooking process will be noticeable in the restaurant itself, with exposed brick walls, large wooden tables and unmatched white chairs among the decor.

The restaurant is set to open its doors for the first time on June 10th and coincides with the release of Mr Loubet's new cookbook 'Mange Tout: Bistro Cooking with a Modern Twist', his first publication in close to 20 years.ADNFCR-16001031-ID-801592796-ADNFCR
