Health and Safety is the priority in any kitchen. One of the best ways of ensuring good food hygiene and reducing the risk of cross contamination is to adopt the colour coded system.

Although the law does not state which colour should be used with which foods, the widely used system in the UK is:

Green and - Salad and Fruit

Red and - Uncooked Meats

Blue and - Raw Fish

White and - Bread and Dairy Products

Brown and - Vegetable

Yellow and - Cooked Meats and

To help with communicating this system, an explanatory and laminated wall chart is available from Brakes Catering Equipment. This lists the colours with the associated food types and will help all kitchen employees to work within the recommended food preparation health and safety guidelines.

This system encompasses not only chopping boards but also colour coded knives and other food preparation utensils, thereby reducing the risk of cross contamination.

Where specified, installation can be quoted on request for capital equipment. Price includes delivery to your door (ground floor, UK mainland only) but not unpacking or positioning. Customers must check all door entry sizes. Brakes will not accept responsibility for any units that will not fit into the customer’s premises. Any carriage charges caused by an aborted delivery are the customer’s responsibility and will be charged accordingly. Any products incorrectly ordered by the customer will incur a re-stocking fee, products must be returned in original packaging and be unused. Stainless steel fabrication is non-returnable.
