Simon Rimmer launches new restaurant

Celebrity chef Simon Rimmer is set to open up a new restaurant in Liverpool.

It will be located at the DoubleTree by Hilton Liverpool hotel and is set to be called Simon Rimmer at Layla Brasserie. 

The project represents the first time Rimmer has put his name to a restaurant - he previously opened Manchester-based vegetarian Greens, as well as Earle in Hale - and it marks a significant expansion of his portfolio. 

While he is well established in the north-west culinary scene, for many people the 50-year-old is most famous for co-hosting magazine shows Something for the Weekend and Sunday Brunch.

The new venture is set to be opened towards the end of the year and between now and then Rimmer and his team will have to make some decisions about fitting the kitchen. Set to be located in Liverpool's first five-star hotel, expectations will be high and so the chef will be looking to kit out the site with the best catering equipment

Speaking to Click Liverpool, Rimmer said: "We are in the process of hand-picking the most talented and creative chefs in the hospitality industry who will join the team in Liverpool.

"Thanks to their expertise, my vision for creating something really special and my ambition to be the best independent neighbourhood restaurant in Liverpool is being realised."

David Hughes, general manager of DoubleTree by Hilton Liverpool, added the hotel is "delighted" to be working with Rimmer. He added the prestige associated with the hotel means they had to attract one of the country's finest chefs to head up the restaurant. 

In order to offer a unique experience, Simon Rimmer at Layla Brasserie will offer a modern British menu, while a series of beers are set to be brewed specifically to go alongside the food. 

Rimmer becomes the latest chef to develop a partnership with Hilton, following the footsteps of well-known chefs such as Nick Nairn and Marco Pierre White.ADNFCR-16001031-ID-801604702-ADNFCR
