Michelin-starred chef to open third Edinburgh restaurant

The proprietor of a Michelin-starred restaurant is to open a new establishment in the Scottish capital.

Tom Kitchin and the management team behind the Kitchin and Castle Terrace restaurants are to open their third site in Edinburgh this spring.

The latest addition to the chef's portfolio will be on the site of the former San Marco Restaurant on Comely Bank Road in Stockbridge and aims to continue the 'from nature to plate' philosophy of its other venues.

Chef Dominic Jack will join Mr Kitchin, food and beverage director Philippe Nublat and head of front of house Michaela Kitchin, in the new venture.

Although a name has not yet been decided for the latest Kitchin offering, the team promise it will offer "simple, affordable dishes executed to perfection, showcasing their expertise, passion and knowledge of the best suppliers in Scotland", and will be set in a more informal environment than its existing restaurants.

In a statement, the professionals claim the pub will provide "fresh Scottish scran", with "a warm, family-friendly atmosphere matched with affordable, freshly prepared, home-cooked dishes".

The site, formerly owned by brothers Franco and Nino Alozni who had been operating there since 1984, is likely to see the installation of new restaurant equipment, furniture and other additions, as it undergoes a refurbishment to bring it into line with the existing Kitchin and Castle Terrace establishments.

Mr Kitchin, who was Scotland's youngest Michelin-starred chef at the age of 29, said he planned to use the new pub as a training ground for inspiring young talent, the Scotsman reported.

"We're going to have a major influence on the menu at the new pub and we'll be using it to train up younger chefs and get them up to scratch," he said.

In 2010, the world-class chef appeared as a guest judge on MasterChef and has also previously competed on the BBC's Great British Menu.ADNFCR-16001031-ID-801538294-ADNFCR
