Caterer Elior has been handed a contract with National Welsh Museums worth £28 million that will see it operate at three sites in the country over the next ten years, continuing its association with the organisation.

Elior has held a similar contract since 2006 and will continue to be responsible for sites - Cardiff's National Museum, St Fagan's National History Museum and the National Waterfront Museum in Swansea.

The company now has plans to revamp several of the sites, purchasing additional catering equipment and other items to improve the service it can offer visitors, reports Caterer and Hotelkeeper Magazine.

St Fagan's National History Museum recently benefited from a £26 million lottery investment aimed at turning it into a tourist destination all year round.

David Carr, Elior's UK commercial director, explained that the firm plans to invest £840,000 in St Fagan's to develop the event menus and give training and mentoring to the team. This will be carried out as a collaboration with Shaun Hill, chef proprietor of the Walnut Tree in Abergavenny.

"The investment will include two new restaurants and a number of catering concepts around the site, including converted trams serving hog roasts and barbeques featuring pork from pigs reared at St Fagan's," the director explained.

Welsh cakes and coffee from locally-roasted beans will also be used at the site, with the emphasis on environmentally-friendly, high-quality produce.

"We will also convert a pottery shed into a Welsh tea room while the refurbishment of the facilities is in progress," Mr Carr added.

Mr Hill will train chefs for the new restaurants, drawing on his Michelin star experience, the Elior chief said..

"Our visitors expect a taste of Wales and an excellent one at that. Offering local produce completes the Welsh experience for our visitors," Mr Carr concluded.
