Claude Compton launches new London restaurant

Claude Compton, a chef known for his work at Petersham Nurseries Café and Club Gascon in London, has opened a new eatery in the capital.

Located in a space above the popular Amuse Bouche champagne and cocktail bar in Parsons Green, Claude's Kitchen is a 40-cover 'neighbourhood-style' restaurant that will focus on cooking with seasonable and sustainable ingredients.

According to the new venue's Twitter account, it will aim to offer a "Brit ingredient-led menu with seriously fresh flavours in a refreshingly rustic way".

In a statement cited by Big Hospitality, it was revealed that sous chef Pete Harley-Booth will be joining Compton at the new restaurant, having also worked alongside him at Petersham Nurseries in Richmond.

The pair were described as "extremely talented chefs who have worked in a range of Michelin-starred kitchens under the tutorage of some of the best names in the business".

It added: "This has created a fun and dynamic working environment and an energy which is shown in the cuisine, hospitality and atmosphere of the restaurant."

Commercial kitchen equipment will be used to create dishes for a regularly changing menu at Claude's Kitchen. Each week will bring new additions to the menu, with dishes such as wood pigeon and caramelised chicory, free range pork belly with quince puree and bitter chocolate parfait to be expected.

Compton is also the co-founder of award-winning street food company Green Goat Food, which uses a converted school bus to sell gourmet and ethically-sourced meals at markets across the capital.
