New food waste study commissioned

Some of the UK's leading restaurants have commissioned a study into how they can cut down on food waste.

London-based company Carbon Statement will carry out the report, which will include evaluating and recommending the best catering equipment for reducing waste and converting it into energy.

It has been commissioned following research by the Carbon Reduction Forum, which found that over half of food waste is currently going to landfill.

The forum represents the interest of 12,000 restaurants and pubs, including nationwide chains such as Nando's and Mitchells & Butlers.

“The industry has a great opportunity to collaborate to improve efficiencies of collection and benefit from volume deals with the food waste to energy companies,” Peter Charlesworth, director of Carbon Statement, commented.

He added: “These benefits include removing landfill charges, reducing backhauling and transportation costs and associated carbon emissions while earning money from generating energy.”

Mr Charlesworth said Carbon Statement has mapped all of the forum members' sites across the UK against existing and planned anaerobic digestion (AD) capacity. This will optimise the waste collection process and provide useful data for the potential development of new AD plants.

He stated: "Today there is little coordination between the supply of food waste, collection and the positioning of sites. Since Scottish legislation bans food waste to landfill from 2014, we need to act now, together as an industry, to tackle this problem."

The study has been supported by the Waste and Resources Action Programme (WRAP). Charlotte Henderson, WRAP programme area manager, commented: "WRAP is delighted to support this collaborative and innovative approach to increasing the recycling rate of food waste and reducing the amount that ends up in landfill."

The news has also provoked a positive response from some of the restaurants involved. Richard Felgate, head of energy and environment at Mitchells & Butlers, said the company is keen to see how its waste management and recycling could become more efficient by working alongside others in the industry.ADNFCR-16001031-ID-801565383-ADNFCR
